    Jello is insanely popular in Utah, which puts it in red plate country. There was a great write-up about Utah having the highest consumption by state, dropping to second behind Iowa, and regaining honor through political decree.

    According to your link, in Utah, Jello is a snack food, not a salad! I really wonder how many places other than Lileks Gallery of Regrettable Food you could find these days where Jello Salad is still “alive.” Julia Child and Alice Waters did have an impact nation wide. But everything becomes regrettable after a while; how about beet and chevre salad?
