  • Cochon de Lait Po'boy. The Best Po'Boy at the Fest. Get one early or you'll be sorry! (at Food Area 1)
  • Softshell Crab Po'boy. It comes naked, you dress it yourself. Almost tied with Cochon de Lait Po'boy for the best at the Fest. (at Food Area 2)
  • Cajun Duck Po'boy , saucy, tasty duck with tangy coleslaw. An unusual but unforgettable choice.(Food 1)
  • Oyster Po'boy, a classic. (Food 1)
  • Paneed Chicken Po'Boy, much better than the fried chicken pieces. (Food 1)
  • Quail and Pheasant Gumbo, one of my two favorite gumbos at the Fest. This got the edge for being darker, thicker style. (Food 2)
  • File Gumbo, a little thinner than the other gumbo, but delicious too. (Heritage Square)
  • Crawfish Bread. Think grilled cheese sandwich with gooey, orange cheese of dubious origin, and crawfish. It's so bad it's SO GOOD! (Food 1)
  • Crawfish Monica. It's like macaroni and cheese, but with crawfish. I never could eat more than a few bites but I love it just the same. (Food 2)
  • Boudin Balls. Liver-y boudins, deep fried, dipped in creole mustard and Crystal hot sauce. What's not to love? (Food 1)
  • Cajun Jumbalaya. Deliciously dark, real Cajun style. Mind you this isn't jumbalaya for beginners. (Food 1)
  • Pork and Sausage Jumbalaya, the sausages are especially tasty. (Food 2)
  • Fatty Cracklins. FATTY cracklins. They're not kidding. (Food 2)
  • Lard-fried sweet potato chips. Praise the lard! (Food 2)
  • Beignets and frozen cafe au lait, Heritage Square
