At 6.45pm, place the stuffed, tied, and rubbed pork loin on the middle rack of the oven.  Set your timer for 1 hour and 10 minutes.

    In the previous step, after you’ve taken the cake out of the oven, you are instructed to lower to temperature to 325F, which is the temperature for the pork.
