Start the side vegetable – Side Dish

- 3 endives
- 2 tart-sweet apples
- 2 1/2 T salted butter
- 1 large bunch of grapes
- 2 rosemary sprigs
Cut the endives in half lengthwise. Cut apples into quarters, cut away the cores, peel off a thin strip of skin down the center of each quarter.
Snip 6 small cluster of grapes from the large cluster, taking care to keep the grapes attached still to the stems. Cut each rosemary springs into 3 pieces.
On a large skillet over low heat, toss in the butter. When it’s melted, add endives cut side down and apples skin side up, add the grapes, scatter the rosemary sprigs and. (If you’re using unsalted butter, sprinkle a pinch of salt over everything.) Let cook over low heat, undisturbed. Set a timer for 20 minutes. (If you only have one timer, just take note of the time you start cooking this.)
